Quinoa Egg Bake (lighter Version)

Ingredients

    This is my version (I greased the pan with cooking spray instead of butter):

    Organic Valley Egg Whites, 1.5 cup
    Whole Foods Organic Quinoa, 0.5 cup
    Horizon Organic Reduced Fat Milk, 1.25 cup
    Garlic, 1 clove
    Thyme, fresh, 1 tsp
    Salt, 1 dash
    Pepper, black, 1 dash
    Earthbound Farm Organic Baby Spinach, 3 oz
    Kraft Fat Free Mozzarella, 0.75 cup

    This is what the original calls for:

    1 teaspoon butter
    1/2 cup uncooked quinoa
    8 eggs
    1 1/4 cups milk
    1 tablespoon chopped garlic
    1 teaspoon chopped thyme
    1/2 teaspoon salt
    1/2 teaspoon pepper
    2 cups packed baby spinach, roughly chopped
    1 cup finely shredded Romano or Parmesan cheese
