  • 1 1/2 pounds Russet potatoes
  • 1/4 cup grated Parmigiano-Reggiano
  • 1/4 cup all purpose flour
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 leek, white and light green parts thinly sliced
  • 4 ounces mild Italian sausage (1 link), casing removed
  • 2 cups baby spinach, roughly chopped
  • 4 ounces mozzarella cheese, grated or cubed
  • 5 eggs
  • 1/4 cup milk
  • Coarse salt and freshly ground black pepper
