Asian Salmon With Brown Rice Pilaf


    Brown Rice:
    1 Tbsp Olive oil
    1/2 onion, chopped
    1/2 red bell pepper, chopped
    2 C. water
    1 C. Short grain brown rice
    1/4 C Finely chopped parsley
    Salt and freshly ground black pepper -(Optional)

    Salmon Ingredients:
    2 Skinless salmon fillets (about 4 ounces each)
    1 Tbsp Olive oil
    1 Clove of garlic, pressed or minced
    1 Tbso grated fresh ginger root
    1 tsp soy sauce
    1 tsp maple syrup
    2 green onions, chopped
