Whole Wheat Spice Bread

Ingredients

    1 cup hot, brewed coffee
    1/2 cup raisins
    1/2 cup unsweetened applesauce
    1/2 cup dark brown sugar
    2 eggs
    2 tablespoons molasses
    1 teaspoon vanilla extract
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/2 teaspoon ground cloves or allspice
    1/2 teaspoon ground ginger
    1/2 teaspoon fresh grated ginger root (optional)
    2 cups whole wheat flour
    1/2 cup old fashioned oats
    1 teaspoon baking soda
    1/2 teaspoon salt
    (1/2 cup chopped walnuts - optional and not included in nutrition calculations)
