Ingredients

    1-1/2 tsp. salt
    1-1/2 tsp. fresh lemon juice
    1 celeriac (aka celery root)
    1/4 c. dijon mustard
    2 T. boiling water
    2 T. olive oil (or a milder oil if you prefer)
    2 T. white wine vinegar
    1/4 tsp. salt
    1/3 c. fat free mayo
    3 T. fresh parsley, chopped
