Amy's Lasagna Florentine


    32 oz lean ground beef (or lean ground turkey)

    1 large onion, chopped medium dice
    1 medium fennel bulb, chopped medium dice
    8 oz fresh mushrooms, sliced
    6 cloves garlic, finely chopped
    1 1/2 tsp dried oregano
    1 1/2 tsp dried basil ( I usually omit this because I don’t buy it)
    1/2 tsp red pepper flakes
    1 Tbsp fennel seed, toasted and crushed

    15 oz can crushed tomatoes
    28 oz can diced tomatoes
    6 oz can tomato paste
    8 oz water

    32 oz chopped frozen spinach, thawed, drained and wrung out well in a towel
    2 large eggs
    1/4 cup Parmesan cheese, grated
    2 cups part-skim mozzarella cheese, shredded
    2 cups ricotta or cottage cheese

    12 pieces no cook lasagna noodles (I use Barilla brand)
