Ingredients
- 1 large broiler-fryer chicken, cut up
2 celery ribs, sliced
4 carrots, peeled and sliced
1 medium onion, diced
1 (14 1/2 ounce) can chicken broth
2 tablespoons dried parsley
2 teaspoons chicken bouillon granules
1 1/2 teaspoons salt
1/2-1 teaspoon pepper
water
1. Combine chicken, celery, carrots, onion, chicken broth, parsley, chicken bouillon granules, salt and pepper in the pressure cooker add enough water to cover chicken.
2. Bring to a boil; reduce heat, cover and cover and cook it for 20 minutes at 15 psi.
3. Remove chicken and let stand until cool enough to handle.
4. Remove skin from chicken and tear meat away from bones.
5. Return meat to soup;
Southern Style Dumplings
2 cups all-purpose flour
3 tablespoons butter shortening
1/8 tsp of baking powder
1/2 tsp Italian seasoning
1/4 tsp salt
1/2 cup buttermilk (or broth from chicken)
6. In a bowl, combine flour, salt, baking powder, italian seasoning and shortening. Mix together with a pastry cutter, then add buttermilk or broth to form a doughy consistency (similar to how you make biscuits). Sprinkle flour on cutting board. Pinch off part of the dough and roll into a 1/16 thin sheet and cut into 1 1/2 2 squares.
7. Drop one square at a time into the pressure cooker with the chicken and liquid.
8. Cover with the lid and cook on low heat for just 10 mins.
Description
This Is A Pressure Cooker Recipe But Can Be Converted To A Slow Cooker. Just Cook Chicken In Slow Cooker And Then Tranfer Liquids To A Dutch Oven And Bring Water To A Boil To Cook Dumplings.
