Tangy Tuna Wasabi Roll-ups

Ingredients

    8 large leaves of Romaine Lettuce
    1 can tuna, drained (3 oz)
    3 Tbs onion, minced finely
    3 Tbs celery, minced
    4 Tbs grated carrot
    2 Omega 3 Eggs, hard boiled and chopped
    1 tsp pickled jalepeno
    2 Tbs capers, chopped
    1 Tbs horseradish
    2 Tbs Mayo made with canola or olive oil
    1-2 tsp wasabi powder, mixed into paste
    1 Tbs lemon juice
    1 Tbs sweet pickle relish
    1 tsp garlic, finely minced or paste
    1 Tbs mustard (preferably spicy mustard)
    1/2 tsp turmeric
    1/2 tsp celery seed
    1/2 tsp black pepper
    1/2 tsp salt (optional)
