Ingredients

    1 c. frozen spinach
    1 c. chopped onion (1/2 medium onion)
    1/2 cup chopped red or green bell pepper
    1 1/2 cup chopped portobella mushrooms
    1 cup sliced carrots (1 large)
    1 clove garlic, minced or crushed
    1 bag brown rice, cooked and slightly cooled (about 1 cup uncooked, yielding 2 cups)
    1/2 tsp red and black pepper blend
    3/4 tsp paprika
    3/4 tsp chili powder
    1/2 tsp cumin
    1/4 tsp garlic powder
    dash nutmeg
    1/2 tsp salt
    1 Tbsp olive oil
