Eggplant "lasagna"

Ingredients

    1 Bunch fresh spinach (or 1 box frozen, thawed and drained well)
    1 Eggplant - approx. 1-1/4 lbs.
    3 egg whites, lightly beaten
    2/3 c. bread crumbs, seasoned to taste
    2 t. Mrs. Dash table seasoning
    1 jar pasta sauce (I used a non meat/cheese for the nutrition calculation)
    2 c. 2% cottage cheese
    3 Cloves garlic, very finely diced
    1/2 c. onion, finely diced, and cooked in microwave just until softened
    4 T. parmesan cheese, freshly grated and divided
    6 oz. low fat mozzarella cheese, grated and divided

Description

This Is A Great Alternative To The Usual Lasagna. Here, The Eggplant Replaces The Lasagna Noodles. Yummy!
