- 2 1/4 c. spelt rotini (or regular macaroni or shells if you prefer)
1 c. 2% or skim milk
1.5 c. shredded cheese blend containing at least cheddar and Monterey jack
1/3 c. shredded part-skim mozzarella cheese
3 slices low-fat or fat-free American cheese, torn into pieces
1/2 tsp. ground white pepper (this is really important!!)
3 white mushrooms, sliced
3 oz. cubed chicken breast, cooked (I use Trader Joe's Just Grilled Chicken Strips and cut them up)
2 Tbsp. faux bacon bits
1/8 c. bread crumbs
1/4 tsp. extra virgin olive oil
