Morning Glory Muffins (lightened)

Ingredients

    Preheat oven to 350.

    Sift together: 1 cup flour, 1/2 c. sugar, 1 tsp. baking soda, 1/2 tsp. baking powder, 1 tsp. cinnamon, 1/2 tsp. salt. (consider ginger, nutmeg, allspice).

    Grate about 3 carrots (equiv. 1 cup, grated), 1/2- whole apple; together with 1/4 c. shredded coconut, 1/4 c. walnuts, 1/4 apricots (diced). Add all to flour mixture.

    In a separate bowl, whisk egg and egg white; add 1/4 c. applesauce, 2 tbsps. veg. oil, 1 tsp. vanilla (could add more).

    Mix wet mixture into dry. Bake (in lightly spray greased silicon cups) for 35 mins.
