Azteca Potato Enchiladas


    12 flour tortillas, 6" diameter
    1 tablespoon olive oil
    3 pounds of baking potatoes, peeled and diced (5 cups?)
    1 teaspoon chili powder
    1 cup diced tomatoes
    2 tablespoons salsa
    2 cups shredded cheddar cheese
    1 egg
    1 small can of diced green chilies, drained
    1 cup enchilada sauce


These Are Great And Filling Variation On The Traditional Mexican Dish.
