Tuscan Chicken Stoop

Ingredients

    1/2 Large Sweet Onion, Coarsely chopped
    1 Cup Diced Celery
    3 Gloves of Garlic, diced
    2 Sprigs of Fresh Oregano, diced
    2 Springs of Fresh Rosemary, diced
    2 Cups Diced carrots
    1 Sweet Red Pepper, diced
    2 Cups Fresh Green Beans, cut in 1/2 each lengths
    1 Large Yukon Gold Potato, cubed
    1 Zuchinni, sliced
    1 Can of Canneli Beans and juice
    1 Can of Diced Tomatos, and juice
    1 can Artichoke hearts, draine and sliced
    1/2 chicken breast, skinned and cubed
    2 chicken thighs, skinned and boned, cubed
    4 cups of chicken broth
    2 Bay leaves

Description

Add Oil To Large Skillet Over Medium High Heat (5-7). Add All Vegetables, And Herbs (other Than Potatoes And Zuchini) Coarsely Diced Or Sliced As Desired. Saute Until Slightly Tender. Season With Salt And Pepper. Place All Vegetables In A Crock Pot.
