    1 1/4 C broccoli florets
    2 small-medium carrots peeled and chopped into thin sticks
    4 1/2 C napa cabbage (about 1/2 head)
    1/2 red bell pepper thinly sliced
    1/2 yellow bell pepper thinly sliced
    2 scallions (white and green parts) thinly sliced
    4 teaspoons freshly grated ginger
    1/4 C rice wine vinegar
    1/4 C low sodium soy sauce
    3 T vegetable or canola oil
