Chicken Salad Rolls

Ingredients

    1/4 cup fresh lime juice
    2 tablespoons honey
    2 tsps Tamari sauce
    1/4 tsp red pepper flakes (optional)

    4 cups chicken broth - low sodium
    1 pound chicken breast (boneless, skinless)
    12-14 sheets rice paper (8" round)
    8 romaine lettuce leaves, in strips
    1/2 red bell pepper, julienned
    2 medium carrots, peeled and made into strips with peeler
    1 cup bean sprouts
    1/4 cup
    2 green onions, cut into 3-4 inch lengths
    1/4 each of fresh mint, and cilantro or basil
