    1 medium onion, finely chopped
    1 tsp fresh thyme leaves, chopped
    3 Tbsp flour
    2 1/2 cup skim milk
    1/8 tsp. ground nutmeg
    salt and blk pepper
    4 oz. Fontina cheese, cubed
    1 cup part skim ricotta cheese
    1 cup grated parmesan cheese
