Ingredients
- This crispy fried tofu features the simple yet stunning flavor combination of red pepper, black pepper and salt that usually reserved just for seafood in Chinese cuisine. While its fried this recipe still uses far less oil than its more traditional counterparts and far less than anything youll ever encounter in a restaurant.
For the tofu:
1 lb firm tofu, drained
1 tablespoons dry sherry or rice wine
2 teaspoons soy sauce
3 tablespoons corn starch
3-4 tablespoons of peanut oil for frying
For the stir-fry:
1 tablespoon peanut oil, optional
2 cloves garlic, finely minced
¼ inch cube ginger, peeled and minced
1/4 teaspoon or to taste red pepper flakes
½ teaspoon freshly ground black pepper
1/4 teaspoon coarse salt, such as kosher salt
2 teaspoons rice vinegar
1 scallion, thinly sliced
