Chicken & Shrimp Stir-fry

Ingredients

    2 boneless & skinless chicken breast cut in thin strips
    6 oz or about 16-20 raw, deveined , headless shrimp
    1 small to medium onion sliced
    1/2 medium red onion sliced
    1 large green pepper sliced
    1 medium red pepper sliced
    1 small yellow pepper sliced
    2 cups white or cremini mushrooms sliced
    1 1/2 cups broccoli cut into florets
    1/2 small head cauliflower cut into florets
    1 cup snow peas washed and stringed if necessary
    1 1/2 cups shredded bok choy or other chinese cabbage
    4 cloves garlic chopped
    3 slices ginger root chopped
    Juice of 1 lemon or 15 ml lemon juice
    2 tsp sesame oil
    3 tbsp canola oil or peanut oil
    3 tsp low sodium or light soy sauce
    2 tbsp rice wine vinegar
    2 tbsp water
    3 tbsp corn starch
    salt & pepper to taste
