Ingredients
- 2 Chicken Thighs (1 per person)
1 medium potato, cut into small cubes
10 baby Carrots cut into 3rds
1 small sweet pepper your choice of colour chopped
1 small onion cut into large pieces
6 cloves of Garlic peeled but not chopped
1 cup cauliflower chopped (broccoli is nice too or half and half)
1 tbsp olive oil
1 tbsp balsamic vinegar
1/2 tsp dried thyme (or 2 tbsp fresh)
1 tsp dried parsley (or good handful of chopped fresh, but dont add fresh till it comes out of the oven.
salt and pepper to taste.
