Ingredients

    BEEF:
    * 1 1/2 lb boneless sirloin steak, trimmed and cut into 1/2" pieces

    * 3 TBSP red wine vinegar

    * 2 tsp ground aji amarillo or hot paprika

    * 1 tsp salt

    * 1 tsp freshly ground black pepper

    * 1/2 tsp ground cumin

    * 1/2 tsp ground tumeric



    FIERY RUB:
    * 1 tsp ground aji amarillo or hot paprika

    * 1 tsp salt

    * 1/2 tsp freshly ground black pepper

    * 1/4 tsp ground tumeric

    * 3 TBSP fresh, flat-leaf parsley, chopped

    * Cooking spray


    ROASTED YELLOW PEPPER SAUCE
    (not counted in calorie count for this recipe, but according to Cooking Light, equals 41 calories per serving, which is 2 TBSP)

    * 1 large yellow bell pepper (about 10 oz)

    * 1/4 green onions, finely chopped

    * 1 TBSP water

    * 1 TBSP olive oil

    * 1 TBSP fresh lemon juice

    * 1 tsp ground cumin

    * 1 tsp ground aji amarillo or hot paprika

    * 1/2 tsp ground turmeric

    * 1/4 tsp salt

    * 1/4 tsp black pepper

    * 1 garlic clove, minced
