Vegan Creamy, Curried Veggies

Ingredients

    1 large onion sliced
    6 cloves garlic minced
    3 large carrots, diced
    2 T olive oil
    1 med potato cubed
    1 1/2 C cauliflower florets, sliced
    8 mushrooms, sliced
    1/2 tsp cumin
    11/2 tsp tumeric
    pinch of cayenne pepper
    1 C coconut milk ( or light coconu or soy milk)
    1 C peas
    1 C broccoli florets sliced
    2 C chickpeas
    3 T braggs or soy sauce
