    4 cups water
    1/2 Tbsp olive oil
    1.5 cups chopped onion
    2 medium cloves garlic, minced
    2 Tbsp freshly grated ginger root
    1.5 tsp salt
    1/4 tsp ground cumin
    1/4 tsp ground fennel
    1/4 tsp ground cinnamon
    1/4 tsp ground allspice
    1/4 tsp dried mint (I used peppermint)
    4 Tbsp fresh lemon juice
    1 cup lightly toasted cashews, no salt
