7 Layer Salad

Ingredients

    7 LAYER SALAD
    1 10oz PK Baby Spinach shredded & cross cut
    3 Cup Romaine Lettuce shredded & cross cut
    3 Celery Stalks chopped fine
    6 Tbsp Onions chopped fine
    1 Lg. Red Bell Pepper chopped fine
    1 Pk Baby Peas frozen/thawed drain well do not cooked
    0.5 cup Mayo (not salad dressing/Miracle Whip)
    0.5 cup Cheddar Cheese
    4 Bacon Strips crisp crumbled
    Directions:
    Layer all ingredients as they're listed. Drain Bell peppers between paper towels to keep salad from being wet and soggy, continue to layer. Spread mayonnaise with the back of a large spoon dipped in water so peas will not roll up onto the spoon. Sprinkle cheese followed by bacon crumbs
    Makes 14-16 servings.

    This salad can be made a day ahead. Cover with plastic wrap. Hold the bacon crumbs to keep the crispness, sprinkle on top when ready to serve.
