Ingredients
- about 8oz baby spinach, roughly torn(I didn't, but I will, next time... it will make it much easier to cut and serve)
- 1lb thick cut smoked bacon, cooked crisp and crumbled
- about 1 cup snow, sugar or snap peas, cleaned and cut in half
- 1 large, or 2 small, bell peppers, chopped
- 4-5 green onions, chopped
- 1 cup fresh tomatoes, cut(I used cherry tomatoes, quartered)
- 2 avocados, diced
- 1 cup shredded colby, cheddar or cojack cheese
- 1/2 large lemon, juiced
- For Dressing
- 1/2 lemon, juiced
- 3/4cup mayonnaise
- 1/2 cup sour cream
- 2t Dijon
- 1T dried dill weed
- 1 clove garlic, minced
- 2t worcestershire sauce
- 1/4-1t cayenne or hot sauce
- fresh ground black pepper
