Salmon, Orange, Couscous Salad

Ingredients

    * 1 1/2 cups couscous
    * 2 1/4 cups vegetable broth
    * 1 cup peas
    * 5 green onions (scallions), chopped
    * 1/2 cup carrots, sliced thin
    * 1 cup raisins
    * 1/3 cup orange juice + 1/3 cup
    * 1 red or yellow bell pepper, chopped
    * 3/4 cup pine nuts or almonds (optional)
    * 1/3 cup red wine vinegar
    * 1/4 tsp turmeric
    * 1 tsp curry
    * 1 tsp Dijon mustard

    Preparation:
    Combine couscous with vegetable broth and bring to a boil. Cover and remove from heat. Set aside and allow to steam until thoroughly cooked, stirring to fluff.

    Place raisins in 1/3 cup orange juice and allow to absorb the moisture for at least 15 minutes. Combine carrots, peas, green onions and raisins with couscous.

    Whisk or blend together the 1/3 cup orange juice, red wine vinegar, turmeric, curry and Dijon. Pour over couscous and veggies and stir well to combine.
