Asian Vegetable Stir-fry With Tofu

Ingredients

    2 cups cooked brown rice
    2 tablespoons toasted sesame oil
    1 medium onion, chopped
    6 slices peeled fresh giner
    1 small stalk broccoli
    2 small carrots, sliced in strips 1/8 inch thick
    2 stalks celery, chopped in 1/4 inch moons
    4 cloves garlice, minced
    1/8 teaspoon powdered ginger
    2 cups kale, chopped in thin strips (green, leafy part only)
    1 small red bell pepper, cut in strips
    1 cup tofu chunks, 1/2 inch pieces, steamed
    14 snow peas (edible pea pods), ends removed and deveined
    1/2 cup sliced water chestnuts
    3 tablespoons simmered tamari soy sauce
    several dashes of cayenne
