Chunky Garden Spaghetti Sauce

Ingredients

    1 large can tomato sauce
    1 large can diced tomatoes
    2 T sugar
    1/8 c cooking sherry or red wine
    1 tsp each: dried basil, dried oregano, dried rosemary, dried thyme, dried parsley (if using fresh herbs, double or triple the amount)
    1/2 tsp cayenne or red pepper

    3 T olive oil
    about 6 baby carrots or 1 regular carrot, finely diced
    2 stalks celery, finely diced
    1 red onion, chopped
    3 cloves garlic, chopped
    1 bell pepper, chopped
    8 oz of either white button mushrooms or crimini mushroom, sliced
