    1/3 cup hot water
    ¾ cup gluten-free all-purpose flour
    ¼ cup coconut flour
    ¼ cup arrowroot or corn starch
    ¼ cup ground walnuts
    ¼ cup psyllium fibre husks (optional)
    ½ tsp guar gum
    1 tsp cinnamon
    2 tsp baking soda
    ¼ tsp cream of tartar
    ½ tsp salt
    2 ½ tbsp canola oil
    1/3 cup unsweetened apple butter
    2 tbsp fresh-grated ginger
    ½ cup dark brown sugar
    2 apples, peeled and chopped finely
    ¼ cup diced crystallized ginger
    ¼ cup raisins, soaked in hot water and drained

    Topping
    1 tbsp turbinado sugar
    1 tbsp white granular sugar
    ½ tsp cinnamon
    ¼ tsp ground ginger
