12 oz. chicken breast OR 1 lb. extra firm tofu (NOT silken), cut into 1-inch cubes**
3/4 lb. cremini mushrooms, sliced thickly
1 (14 oz.) diced tomatoes, drained OR 2 c. diced seeded tomatoes
1/4 c. fresh basil, chopped
