Ingredients

    - 1 cup plus 1 tablespoon all-purpose, unbleached white flour
    - 1 cup plus 1 tablespoon whole wheat flour
    - 1 cup plus 1 tablespoon wheat germ, unsweetened
    - 2 teaspoons baking powder
    - 1/2 teaspoon salt
    - 1 teaspoon instant coffee granules
    - 1/2 teaspoon cinnamon
    - 3 tablespoons unsweetened cocoa powder
    - 1 large egg
    - 1/2 cup sugar
    - 3 tablespoons walnut, almond, or canola oil
    - 2 1/4 cups raw baby spinach leaves (1 cup frozen chopped spinach, or frozen chopped collard greens)
    - 1 1/8 cups fresh or frozen blueberries (no syrup or sugar added)
    - 3/8 teaspoon lemon juice
    - 3/8 tablespoons water
    - 1 teaspoon pure vanilla extract
    - Powdered sugar, for dusting
