Ingredients

    (1/5 pound pork tenderloin- if using)
    3/4 t lemon pepper seasoning (I used rosemary garlic)
    3/4 t salt (salt in rosemary garlic, so no more added)
    1 T olive oil
    1 med red onion, chopped
    1 medium Granny Smith Apple, peeled, cored and diced.
    1 C uncooked Quinoa
    2 C chicken broth
    2 medium carrots, peeled and shredded (I diced)
    3/4 C dried cranberries (I used .5 C)
    .5 C walnuts chopped
    .5 C crumbled feta cheese
