Ingredients

    1 pound shrimp, deveined, tails left on, rinised and patted dry
    1/3 cup cornstarch
    1/2 teaspoon cayenne pepper
    2 limes zested
    3 eggs whites, room temperature
    1/4 teaspoon salt
    1/2 cup coconut, unsweetened
    1/2 cup Panko bread crumbs
