Ingredients
- 2 tbsp olive oil
1 med onion chopped
1 med carrot chopped
2 stalks celery chopped
3 cloves garlic chopped
1 can tomatoes (diced or any other)
1 whole bay leaf (removed when done)
1 carton chicken or vegetable broth
and an equal amount of water
1 med acorn squash peeled and cubed
1 cup elbow pasta or any other pasta
2 medium potatoes peeled and cubed
1 can beans (any kind you like ie: romano, pinto, kidney)
1/2 bag frozen chopped spinach
Salt only if needed
Pepper to taste.
These are all aproximate measurements. I don't measure when cooking. I use whatever I have on hand. You can use all broth, or all water and add chicken boullion cubes; use different pasta, use zucchini, different beans. Put in whatever you like. Add chopped parsely at the end. You can add sausage or bacon when sauteing the onion for more flavour, however, more calories too. Adjust the liquid as you go and taste for salt.
