Simple Quinoa Salad

Ingredients

    1 cup of dry Quinoa, pre-cooked and cooled
    1 cup of fresh snow peas
    1 medium raw carrot
    1/2 cup of cucumber, diced, unpeeled.
    1/4 cup fresh parsley
    1/2 cup sunflower seeds
    1/2 cup walnuts (optional)
    1/3 cup dried, unsweetened cranberries

    Dressing
    2 tbsp lemon juice
    1 tbsp lime juice
    1/4 cup of extra virgin olive oil
    1/4 tsp salt
    pinch of black pepper
    1/4 tsp minced garlic or garlic powder to taste
    1/4 tsp minced ginger or ginger powder to taste (optional)
    pinch of cayenne (optional)
