Amaranth Muffin Recipe

Ingredients

    Amaranth, uncooked, 3/4 cup
    2 1/4 cups water
    quinoa flour, 1 cup
    Bob's Red Mill Organic Rolled Oats, 1 cup
    Almonds, 1/2 cup, whole
    Dates, 1/2 cup, pitted, chopped
    Baking Soda, 1/2 tsp
    Organic Raw Blue Agave, 1/2 cup
    frozen strawberries, 1/2 cup
    Baking Powder, 1/2 tsp
    Vanilla Extract, 1 tsp

Description

I Created This Recipe Myself. It Is A Work In Progress As I Continue To Tweak Ingredients To See What Works. The Recipe That Follows Is My Second Attempt. I Felt It Came Out Well Enough To Share With Others.
