Quick Lamb Tagine

Ingredients

    2 tbl olive oil
    4 cloves garlic, smashed, then diced
    1 1/2 to 1 3/4 lbs cubed lamb (chicken breasts, diced eggplant or tofu)
    1 1/2 tea McCormick Montreal Seasoning
    2 med or 1 large yellow onion, quartered and sliced
    10 pitted prunes, coarsely chopped
    1 oz box or 1/4 cup golden raisins
    2 cups chicken stock

    Spices:
    1 1/2 tea ground cumin
    1 1/2 tea sweet paprika
    1/2 tea ground coriander
    1/2 tea tumeric
    1/8 tea cinnamon

    Rice:
    1 1/2 cups long grain rice
    2 cups chicken stock
    1 1/3 cup water
    3 scallions, finely chopped

    Condiments (optional):
    Mango chutney
    Finely chopped scallions
