1 can chickpeas, drained and rinsed
4 tablespoons Splenda
1 teaspoon baking powder - 1/2 syn
3 eggs, separated
Almond Essence, or whatever flavouring you like
70 gms apricots - 6 syns or HEB
Procedure
Mix everything in a processor except egg whites and fruit.
Whisk whites and fold in with fruit.
Bake 180'c for 30 mins
Cooks well in the microwave.
Only 1/2 syn for the whole cake without fruit.
Try other dried fruit, cocoa, spices, Just remember to change the syn value.
This is really like a cake and disappears fast.
