- 4lbs boneless pork loin, raw weight before trimming (be sure to remove ALL fat; electric knife works well)
1/4 Cup +2Tbsp (6Tbsp) cornstarch
1 large onion, sliced into long strips
4 cloves minced garlic (I use mini food chopper)
2 tsp fresh grated ginger root
2 large carrots, sliced on the diagonal
2 stalks celery, sliced on the diagonal
2 green bell peppers, cut in 1-inch chunks
1 20oz can pineapple chunks in unsweetened pineapple juice, keep the juice
1 16oz jar maraschino cherries, keep the juice
1/2 Cup apricot preserves
1/2 Cup apple cider vinegar
