    2 small carrots, peeled and sliced diagonally
    1 package (3.5 oz) fresh enoki mushrooms
    1 bunch of fresh baby spinach or watercress
    1/2 cup thinly sliced red bell pepper
    1/2 cup chopped fresh cliantro
