Ingredients
- 1 lb of butter I use Organic Unsalted Butter from Fresh Market
1 cup of Powdered Sugar
1/2 cup of light brown Sugar
Cream the butter and both sugars together until they are thoroughly whipped. I have gone as long as 10 to 15 minutes for this step.
1 tsp Vanilla, 1 tsp Instant Espresso, 1/2 cup Cocoa, 1/2 cup of Cornstarch, 1/4 tsp Baking Powder
Add the Vanilla, Instant Espresso, Cocoa, Corn Starch and Baking Powder.
3 cups of flour
Add the flour slowly to incorporate it without having it blow all over the kitchen.
You want the mixture to look like cream after you have finished adding the dry ingredients to it.
Like a traditional shortbread there is no leavening in the recipe except for the 1/4 tsp of baking powder which I added for more stability for shipping to my sister.
The leavening it gets is from the air trapped in the dough. So I have never had a problem with whipping the batter longer than was originally called for in the first whipped shortbread cookie recipe that I tried.
I generally get 28 total cookies (and they are very large cookies) out of this recipe
