Non Fried Egg Rolls

Ingredients

    EGG ROLL:
    1 packet Egg Roller wrapper from frozen section of Oriental Market). They are precooked. Thaw 10 minutes just before serving.

    ‘A’
    1 medium size cabbage, shredded
    1 block of firm TOFU, cut into small cubes and dried on paper towel, lightly pan fried till crunch.
    4 medium size carrots, cut into thin strips
    2 medium size Jicama, cut into thin strips

    ‘B’
    5 or 6 shallots (or pearl onions), minced
    3 to 4 cloves garlic, minced
    3 to 4 tablespoons vege oil.
    Combine the above and microwave for 2 to 3 mins. until slight golden.

    For garnishing:
    Sweet soya sauce (from oriental market)
    1 cucumber, remove skin and cut into thin strips.
    Lettuce (optional)
    Peanuts, ground slightly, keep it coarse so you can taste it.
    Cooked shrimps (Boil shrimps with shells in water for 2 to 3 mins.) remove, pat dry and retain water.
    Cooked chicken strips (marinate 1 pound chicken strips with 2 tsps sesame oil, 2 tsps soya sauce and good sprinkle of pepper for 2 hours or so).
    Cooked beef tenderloin (marinate 1 pound strips with sprinkle of pepper, 1 ½ tsps. salt, 2 tsps. Sesame oil and 2 tsps. Corn starch). Marinate 1 hour at least.
    Any hot sauce of your liking.

Description

To Make Vegetarian Leave Out The Beef Chicken Or Shrimp.
