Ingredients

    1 or 2-pound butternut squash halved lengthwise, seeded and cut into 8 pieces
    1-pound celery root, peeled and cut into 1-inch round chunks
    1/4 cup water
    2 leeks, thinly sliced
    2 t minced fresh thyme (or 3/4 t dry)
    4 - 6 cups broth
    1 bunch Greens. chopped
    Lemon or vinegar -- to taste
    Salt and pepper -- to taste
