    3 tbsp olive oil
    1 lg onion diced
    1 fennel bulb diced
    2 med stalks celery fine dice
    1 red pepper diced
    2 8oz bottles Snow's clam juice
    2 cans 99% fat free chicken broth
    2 cans diced tomatoes
    1 tsp saffron
    2 tbsp paprika
    1/4 c dry sherry
    1-2 c water
    1 c chopped parsley
    1 lb shrimp
    1 lb bay scallops
    2 lb mussels with shells
    5 cod fillets

Description

Saute Onion, Fennel, Celery In 2 Tbsp Olive Oil, When Translucent Add The Next 8 Ingredients And Simmer For About 30 Minutes. Add Mussels Cook Until They Open Then Add The Rest Of The Seafood And Parsley And Cook For About 10 Minutes Then Serve Immediat
