Cioppino Recipe

Ingredients

  • 1 tsp extra virgin olive oil
  • 1 lrg onion, minced
  • 1 c. slice celery, with celery tops
  • 1 clv garlic, chopped
  • 4 x 6 ounce clam juice (one bottle)
  • 1 c. chicken broth, white wine and/or possibly Clamato juice
  •     water as needed
  • 1 Tbsp. salt-free Italian herb seasoning
  • 1/4 lb cod or possibly other boneless mild-flavored fish fillets
  • 1/4 lb small shrimp, peeled and deveined
  • 1/4 lb bay scallops
  • 1 lrg tomato, minced
  • 1/4 c. flaked crabmeat or possibly crabmeat blend
  • 1 can (10 ounces) baby clams, rinsed and liquid removed (optional)
  • 4 Tbsp. minced fresh parsley
  • 2 Tbsp. fresh lemon juice
