Mock Meat Loaf

Ingredients

    2 tablespoons extra virgin olive oil
    1 large onion, finely chopped
    1 cup broccoli, chopped small
    1 cup carrots or yams, chopped small
    I cup red bell pepper, chopped small
    1/2 cup almonds, or pecans, chopped small
    1/2 cup black olives, chopped small
    3 cloves of garlic, minced or pressed
    2 tablespoons of vegetable broth powder
    3 teaspoons simmered tamari soy sauce
    4 teaspoons parsley, dried
    1 teaspoon basil, dried
    1 teaspoon paprika
    1 teaspoon dill weed
    1/2 teaspoon marjoram
    1/2 teaspoon thyme
    1/4 teaspoon sea salt
    2 cups crumbled regular tofu
    1/2 cup ground raw almonds
    2 tablespoons soy or chickpea flour

Description

Serve With A Favorite Sauce Or Gravy And Vegetable Side Dish. Keeps For Up To 7 Days Refrigerated Or May Be Frozen
