Arugula Salad With Beets And Squash

Ingredients

    2 tsp olive oil, divided
    2 cups very small butternut squash cubes (about the top portion of a butternut squash, peeled and finely cubed)
    ¼ tsp salt
    ¼ tsp garlic powder
    1 (8-oz) pkg Steamed & Peeled Baby Beets, drained and cut into small cubes, or 6 small beets, peeled, and cut into small cubes
    1 (7-oz) bag Wild Arugula Wild Rocket Salad, or other bag of prewashed Arugula
    2 Tbsp of Simplest Salad Dressing (page XXX): 1 ½ Tbsp olive oil stirred together with ½ Tbsp lemon juice and 1/8 tsp salt
    Dash of sesame seeds for garnish (optional)
