- 1 Tbsp Olive Oil
8 oz chorizo sausage, removed from casings (I used Spicy Italian since I couldn't find Chorizo)
2 onions, finely chopped
4 staks celery, diced
4 cloves garlic, minced
1 - 2 tsp Cajun seasoning
1 tsp salt
1 tsp cracked black peppercorns
1 bay leaf
1/4 c short-grain brown rice
2 Tbsp tomato paste
1 (14 oz) can diced tomatoes, with juice
4 c chicken stock
1 lb boneless, skinless chicken thighs - cut into bite size pieces
2 c sliced okra
1 red bell pepper, seeded and diced
1/4 tsp cayenne pepper, optional
finely chopped green onions, for garnish
