Asparagus Tofu Stir-fry


    1 TBSP cornstarch
    1/2 tsp sugar
    1 1/4 c vegetable broth (use organic, if possible)
    4 tsp reduced-sodium soy sauce
    2 tsp minced, fresh ginger root, divided
    3 tsp canola oil, divided
    1 lb fresh asparagus, trimmed and cut into 1" pieces
    1 medium yellow summer squash, halved and sliced
    2 green onions, thinly sliced
    1 package (14 oz) extra-firm tofu, drained and cut into 1/2" cubes
    1/4 tsp salt
    1/4 tsp pepper
    2 c brown rice, cooked
    2 TBSP sliced almonds, toasted
