Ingredients

    CRUST
    1 1/2 cups dry quinoa
    1/2 cup chopped walnuts
    3 tbsp olive oil
    1/2 cup light soy milk
    2 tbsp organic maple syrup

    FILLING
    5 cups peaches or nectarines (about 7 medium) peeled and sliced
    1 cup unsweetened apple juice
    1/4 cup tapioca flour dissolved in 1/4 cup cold water
    pinch sea salt
